INGREDIENTS
For 4 Tortillas
150 g flour
½ tsp salt
½ tsp baking powder
85 g white plain yogurt
TOPPING
100 g Crème Fraiche
Full hand of salad, microgreens (dill, chives)
100 g Smoked salmon
Lemon, squeezed some juice

RECIPE
In a large bowl combine flour, salt, and baking powder. Stir in yogurt. Knead until the dough is smooth, then divide into 4 balls of equal size and let it rest for 15 minutes. On a lightly floured surface roll out the dough into appropriate size circles 1 mm thick.
Heat a non-stick pan over high heat, place the rolled-out dough, and cover. Fry for 1 minute. Flip the tortilla to the other side and fry for another minute. The tortillas should have few brown spots and be nice and soft.
Spread the creme fraiche over the tortilla, scatter with salad and some salmon. squeezed lemon juice over and top with microgreens (dill and chives).
Season with fresh pepper.
Serve.
